  • There is a minimum of 1 ton per lot and a minimum total of 5 tons required to start.
  • Consulting winemakers are onsite and all services are performed by our small team of winemakers, not cellar workers.
  • The entire facility is operates under full temperature and humidity control year round.
  • Air curtains are mounted on all doors to ensure the facility remains sanitary at all times.
  • Equipped with a constant supply of filtered and treated 180 degree hot water.
  • Ozone system utilized throughout the facility to ensure sanitary conditions are maintained.
  • Cloud based software allows us to track every minute of a wines life throughout the entire process with handheld mobile devices.
  • FDA, USDA, ABC, TTB and Health department compliant facility.
  • All walls, ceiling and floors in the facility are sealed and sloped to ensure a sanitary facility at all times.
  • High ceiling allow for ample barrel storage.
  • An in house laboratory allows for analysis without the wait of outside services.  Full microbial scans as well.  
  • YAN reading done in house for proper yeast nitrogen demand.
  • Large glycol chilling system available for fermentation temperature control and cold stabilization.
  • Screw feed conveyors are used to transfer grapes and must to destemmer and press.
  • 2015 model ATI 16HL Soft Press (.5 to 4 tons red or 1.5 tons whole cluster whites).
  • Flexible impeller must and juice pumps are used to gently move wine throughout the facility.
  • Bucher Vaslin Delta E-1 Destemmer.
  • Nitrogen and Argon blanketing.
  • Dissolved oxygen monitoring.
  • Barrel maintenance is done with Posiedon pressure washer, Gamma Jet barrel blaster, on demand 180 degree water, ozone and sulfur gas.
  • Seperate fermentation, case good and barrel rooms.

  • in house lab offers QC Analysis, VA, YAN, MLF, SO2, TA, PH, RS, ALC Phase Contrast Microbial scans, etc.
  • All vessels and client assets are inventoried and barcode tracked.
